A deliberately soft and juicy style of red Burgundy, blending Pinot Noir and Gamay in the traditional ‘passetoutgrains’ style. The grapes undergo thorough de-stemming to remove any harsh tannins, before fermentation and at least 6 months’ maturation prior to bottling. Light in weight, with a juicy summer-fruit character, where bright flavours of raspberry and strawberry abound. Minimal tannins and a good dash of acidity keep the fruit feeling fresh and lively. Drink at cellar temperature with cold cuts, salads, or mild cheese.
